Preparation: -Bring 2 litres of water to a boil. -Add 200g Explore Cuisine edamame and mung bean fettucine. -Reduce heat and simmer for 5-7 minutes. -Rinse, drain and serve. Recipe suggestion: Organic edamame & mung bean fettuccine with courgette ribons in a light pesto sauce: Ingredients- serves 4: -200g organic edamame & mung bean fettuccine. -2 large yellow courgettes, peeled into ribbons with a peeler. -80 g pine nuts Ingredients-sauce: -1 large bunch of fresh basil -2 cloves garlic -60 ml of olive oil -2 tbsp pecans -2 tbsp pine nuts -2 tbsp pomegranate seeds -1/2 tsp coarse sea salt Cooking instructions: Pasta prepare according to above instructions Sauce: Peel skin from garlic cloves, and chop into big chunks. Using a food processor, pulse basil, garlic and nuts several times until finely chopped. Add the salt and olive oil, pulse until blended. Pesto may be thick, so add more olive oil for a looser consistency. -Lightly toast the pecans, pomegranate seeds and pine nuts in frying pan. -Mix the fettuccine with the sauce, gently fold in the remaining ingredients. -Serve immediately.$7.63
